The conservation of energy simply says that energy is not made or destroyed. In other words, in any process that involves energy, it may change from one form to another, but the total energy does not change.

So when electricity goes into a light bulb, it changes from electrical energy to light and some heat energy, but the total heat is the same - no energy is destroyed - in other words energy is conserved.

Even when in more exotic circumstances energy is used to create matter, there is still no loss of energy as Einstein told us mass and energy can be equivalenced through e = mc2; you need a lot of energy to get a little mass.
