How do you take long exposures safely?

First of all you need to ensure that there is no shake. To do this you can forget hand holding the device.
Therefore set it up on a tripod and also use some device to release the shutter that does not involve you pressing the button on top which can lead to shake too, use a shutter release system to do this.
