If the answer of the sum is 1000 and you can only use 88888888 how do you work this out?

You just have to work out the right combination of 8's to get to 1000.
For instance you could say that 8 + 8 is 16.
16 * 8 * 8 is 1024.
8 + 8 + 8 is 24. You then take this away to get 1,000. Easy!
