Should a maze only have one route from A to B?

It depends on the type of maze.

However most people of course associate a maze with having one particular route so that is what people expect to happen.

A maze where there is only one path from one point to another is called a perfect maze, and so therefore with this sort of maze you can set the start and end point wherever you want!
