Should I let my referees know in advance?

Yes if you have referees on your CV then you should definitely let them know as otherwise they might get the call and not realise that you have said they are going to be the referee which might lead to trouble for you.

A referee is basically someone who will vouch for you and could help you to get a job, and so therefore it is important that you respect them by letting them know that they might be contacted and indeed asking their permission in the first place before you list them as a referee!
