The digestion of which class of foods begins in the mouth?

Question asked by: knowitall

Starches start to get digested in the mouth - for instance bread starts to taste sweet after a while as the starch is worked on by amalyse in saliva to result in simple sugars.

So in general the class is carbohydrates but specifically starches.
