What gives the distinctive flavour to alcoholic drinks?

The colour and taste of most alcoholic drinks comes from some of the substances other than alcohol in the mix, which are called congeners.
Of course, the alcohol is what causes the distinctive effect as it is a poison that is cleaned out by the liver, but the taste comes from the congeners.
