Why are weather conditions variable?

Weather conditions vary for several reasons.
Firstly, the amount of water in the air varies, depending on the wind speed, the ground temperature, the amount of sun activity and light that comes through from the sun, the previous weather conditions, the geography of the earth and the amount of water / desert / land underneath a particular patch of the earth.
Ultimately the sun is the driver of the energy systems and exchanges on earth.
