British Pancakes

Everyone loves a pancake but many are afraid of how to prepare them so as not too thick and so they cook correctly. Here is a simple recipe that you can use, that is delicious every time!

You will need:

1.5 pint of milk
2 eggs
1 tablespoonful sugar
1 cup of flour
1 teaspoonful baking-powder
a pinch of salt.

Preparation:

Sift the flour, salt, and baking powder together.

Add to the eggs, which are beaten with sugar and diluted with the milk; mix into thin batter.

Using a medium sized frying-pan first melt a small knob of butter and then pour about 1/2 cup of batter in it.

Roll the pan in your fingers so as the mix spreads out across the surface of the pan whilst still runny - if there is not enough simply add a little more mix to the pan.

Half way through turn or flip the pancake depending how daring you are feeling!

Once cooked, add sugar or lemon and treacle to taste.
