If it is bruised then avoid it. The smell should be sweet at the stem. Sometimes you can make a nice presentation for a dessert by using the shell of a pineapple as a serving dish. To do so, don't remove the crown - just cut the pineapple in half once and carefully cut out the fruit from each half so that you are left with empty shells.
