We naturally form associations over time as to what we are going to have to eat.

For instance, we often accompany a meal with bread to bulk it out more - but several pieces of bread adds a lot of calories as well as stodge.

Over time it can work well to try and retrain your mind to alter associations. Therefore instead of thinking of bread every time you have a meal, why not have another vegetable instead?

This is healthier and will contain less calories, so it's good too.

Over time you will naturally learn the new associations so there won't be the terrifying concept of undoing the good work, because the new diet will be just as much a part of your lifestyle as the old diet was.
