Food And Drink : Main Courses Use two medium sized potatoes per person. Wash and peel. Cut your potatoes into chunks and boil until tender. Drain and pour into mixing bowl. Add salt, pepper, garlic and margarine and blend with your mixer until they are mixed together thoroughly. Add a bit of milk and beat again until smooth. Add more milk until you achieve your desired consistency. That's it - lovely garlic mash! Variant: instead of garlic, use spring onions for a fantastic dish called champ, or even use fried onion.
