How To Make Homemade Ice Cream
Food And Drink : Desserts You dont need any professional or expensive machinery to make ice cream. Here's a home made recipe you can try out. You will need: 3 vanilla pods, 568ml whole milk, 50g skimmed milk powder, 4 egg yolks, and 90g caster sugar. 1. Cut the vanilla pods open with a knife then scrape out the seeds. Add these to the mixer with the egg yolks. 2. Put the milk in a large pan with the empty vanilla pods, skimmed milk powder, and 2 tsp of sugar. Mix them thoroughly and brin to the boil. Then turn the heat down and allow to simmer for 5 mins. Take it off the heat to infuse for a further 20 mins. 3. While you wait, pour the remaining sugar into the mixer and whisk on maximum speed until the mixture is pale and has a larger volume. This should take about 10 mins. Find a big enough bowl for the custard and sit it inside a larger bowl full of icey water. 4. Bring the milk to a simmer again, and pour on the egg mixture. Beat it with a wooden spoon at the same time. Return to the warm pan, cook on a low heat, and keep stirring, until a line drawn into the mixture across the back of a spoon keeps its shape. 5. Add the custard to the cold bowl and stir until it is cool enough to be put in the fridge. Put into a sealed container and keep in the fridge for a minimum of four hours. It can be kept like this for about 2 days. 6. Stir it well then place it in the freezer for half an hour. Remove it and beat with a fork or use an electric mixer. Repeat 3 times then leave in freezer for at least an hour before serving.
