If you are making pastry, then you should ensure that you always have cold hands.

Having cold hands makes the whole affair a lot easier, as it stops pastry sticking to your fingers and messing up, and thus enabling you to roll and control and shape the pastry with your own hands - making it much easier.

To get your hands cold if they aren't already, simply run under cold water for thirty seconds or so before starting to use the pastry. This should work fine!
