One way that you can try to stop this happening and letting more nervous candidates shine is to make the situation a little less intimidating and interview like. This is simply achieved. Normally an interview takes place across a desk, with both parties looking square at each other, this is actually quite a direct and intimidating way to sit. Therefore disarm the situation by sitting at right angles to the interviewee. You may be very surprised, but this changes the situation completely and the candidate is much more likely to relax.
