How To Separate Egg Whites

You have to be careful when separating egg whites as if you try and do it too quickly it is more likely to go wrong. First of all you should take the egg and crack it against the bowl roughly at the centre. Hold it upright and crack open the top half of the egg.

Then you carefully pour the contents of the egg into the other half and back again over the bowl, so that as you do so the white drips into the bowl but the yolk swaps from one half of the egg to the other, until the yolk is the only thing remaining in the egg and all the white is in the bowl.
