Virtually all the time the answer is simple - because you allow your boss to give you lots of work, and don't say anything about it. It may be that you want to impress, get a bonus, or are even perhaps scared to pipe up when you feel that you are overloaded with work. But whatever the reason, the only person that suffers from too much work is you - and therefore the quality of your work can suffer too. If this is the case, then you need to be assertive and each week do a projected time plan for each project. Show your boss with the evidence that you are working at 100% workload so have no capacity for any more, when you are. Also when you present it don't be self-deprecating and say 'I'm really sorry, but...' or anything like that. Rather use positive language and assertive language to state your case without apology, and it will command more respect from your boss.
