Food And Drink : Main Courses

Heat up some olive oil in a pan, then add finely chopped pieces of garlic. Add in a can of tomatoes, whole plum ones are best. Add salt, pepper and brown sugar for extra flavour.

Heat up some olive oil and add chopped parsley and rosemary. Stir for 1 min and add 3 finely chopped leeds. Cook for 10 mins. Add a can of chopped tomatoes, salt and pepper, then cover and simmer for 30 mins.

Creme fraiche with ham chopped and fried is another great sauce to try out too.

If you want to make your own pesto then add 125g of fresh basil into the blender along with some parsley, 2 crushed cloves of garlic, 6 tbsps of olive oil and then 3 tbsps of pine nuts. Blend well. Finally add in 2 or 3 tbsps of hot water and 3 tbsps of finely grated parmesan. Mix again.

Other great pasta sauces to try out are eggy pasta with cheese; broccoli, creme fraiche and parmesan; smoked fish, double cream and parmesan; aubergine, tomato, red pepper and black olives; sausages and chopped onion; and cherry tomatoes with mozzarella, fresh basil and olive oil.
