It has a mild and sweet flavour, and is used as a whole leaf that adds flavour but is not eaten itself- taken out on serving up. Works well with most meats and poultry, and ideal in something like a casserole. You can also add to potatoes when you are boiling them to infuse with a little flavour of bay.
