The reason is simple - one thing that employers value above anything else is enthusiasm for a job. If you are enthusiastic then they know that they won't have to spend lots of effort motivating you and pushing you - you will want to go on and do the best with the job you can. Many applicants however would rather be doing something else, but either want a change or want to improve their salary. Therefore the genuinely enthusiastic individual will be held in high regard and stand out. Tip: at the bottom of your covering letter when applying for the job include a PS stating that this is your dream job and you look forward to finding out more about it at the interview. They will no doubt be flattered you find the job so interesting and this will stand you in great stead to get the interview!
