Quick and easy home-made sponge

INGRIDIENTS:

100g of butter
100g of castor sugar
2 medium eggs
100g of self- raising flour/ 1 tsp of baking powder
1 tsp of vanilla essence
A splash of milk
and a bit of love!

STEP 1

Heat oven to 180 degrease celcius and grease a baking tray laying a piece of baking paper/ grease proof on the bottom.

STEP 2

heat butter until soft and runny and beat for up to 5 minutes gradually adding all of the sugar until white in colour and fluffy in texture.

STEP 3

slowly add the eggs adding half of the flour with each egg until all of the ingridients are mixed in then blits (whisk preferably with an electronic whisk) for 5-10 minutes until bubbles start to appear then add the vanilla extract.

STEP 4

Now pour the mix into your baking tray and bake for 20 mins or until golden brown and a knife will come out clean then take out of the tray and leave to cool.

STEP 5

Leave on a wire rack for 20 mins to cool then take off the grease proof paper and discard now your sponge is ready for eating.

P.S. some people have asked what to put on sponge you can either make two sponges and sandwich a good quality jam, cream and chocky in da middle to make a victoria sandwich. Or make a buttercream with butter and icing sugar and smooth it over the top and cut into slices.
