How to keep sugar soft

The problem with sugar is that it absorbs water from the air.

So once the bag is open if there is water in the air which there is in most kitchens to some extent then the sugar can absorb that water.

This can make the sugar grains stick together and make it hard and klumpy.

But what you can do is to once the bag is open but something else in there which will absorb the moisture more regularly.

The easiest way to do this is to put a couple of cheap marshmallows in the bag with the sugar - these will get the moisture in preference to the sugar leaving that fine to use.
