Have a watch for a few minutes, and try and pick a bird that looks healthy, lively and chirpy. Don't go for one that is sitting quietly and sedately at the back, go for one with an interesting and lively personality. Also ensure that the beak and eyes look healthy - these areas often reveal illness if the bird has one, and of course that it is feathered all over and hasn't been attacked or lost feathers. The more animated the bird and livelier in the cage, this is often a good sign of health and an indicator of the best pet for you!
