How To Make Excellent Chicken Curry

Ingredients:



4 dried red chillies (soaked, drained and minced)



1-3 tsp chili powder



1? cups thick coconut milk



salt



? cups tamarind water



2 tsp ground cumin



3 tbsp ghee (ghee or vegetable oil)



pepper



1? tbsp ground coriander



1? tsp ginger (minced)



1? tsp garlic (minced)



Instructions



1. Heat ghee or oil in large pan and fry chicken until evenly colored; remove.



2. Saute onions, garlic, chilies, ginger and curry leaves in the pan for 3 minutes.



3. Add spices and chili powder.



4. Fry briefly.



5. Add chopped tomatoes, tamarind water, lemon grass and coconut milk.



6. Bring to a boil.



7. Season with salt and pepper and simmer 5 minutes.



8. Return chicken, cover and cook for about 30 minutes.
