Undo a really tight screw by turning it clockwise first and then try it anticlockwise.

And for really stubborn screws, hold a soldering iron against the head for a few minutes to expand both the screw and the surrounding wood. The metal screw will cool and contract again quickly if you hold a screwdriver on it, and the expanded wood will allow it to come out easily.
