What are the advantages of cells such as the intestinal cell over a highy folded cell membrane?

The advantage is function and customisation.

Many special cell types in the body are created to perform just such a certain function and are therefore optimised as it were for performance in that manner rather than being generalist cells.

Therefore it is through a high degree of direction or object orientated design in the cell type that they have the advantage in this sort of scenario.
