What id the Doppler shift and how it can be used to determine the speed of blood?

Doppler shift in general is where light or sound waves that are coming towards you appear to be shortened and then lengthen when they move away - thus you get redshift with light that has travelled a long way and sound waves seem to change pitch from a siren for instance as a vehicle approaches then moves away.
